No Stove, No Oven, No Microwave: No Problem

I’ve had so many people ask about No Bake Recipes after my last segment aired, that I thought I’d share a few more of my favorite summertime recipes! Here are appetizers, main dishes and even a dessert that can be made using just one appliance, the food processor. And there’s no heat required.

Tuna and Basil Bruschetta
1 can very good quality canned albacore tuna (packed in water and drained or olive oil)
1 garlic clove, minced fine
3 fresh basil leaves, julienne
1 tbsp extra virgin olive oil (if using tuna in water)
1 tsp salt
pepper to taste
optional: red bell pepper, celery r chili flake for heat
Good crusty sourdough bread for serving
Directions:
Gently fold all the ingredients together and keep at room temperature. Serve on crusty, sliced sourdough bread

Cannellini Bean and Thyme Bruschetta
1 15 oz can cannellini beans, drained and rinsed
1 celery stalk, chopped
1 garlic clove, minced fine
1 tbsp extra virgin olive oil
1 sprig fresh thyme, de stemmed
Good crusty sourdough bread for serving
Directions:
Gently stir all the ingredients together, keep in a bowl at room temperature for about 30 minutes to develop flavor. Serve on good, crusty sourdough bread

Antipasti Caprese Skewers
fresh basil leaves
tiny fresh mozzarella balls
salami
toothpicks
salt and olive oil for serving
Directions:
Skewer the folded salami, mozzarella and basil. Sprinkle with a little salt and olive oil before serving

Cabo Cobb Salad
2 cups Chopped romaine lettuce or butter lettuce
½ cup shredded red cabbage
½ cup shredded carrots
1 15 oz can black beans, drained
1 15 oz canned corn
1 avocado, cubed
1 breast of roasted chicken, cubed
Cilantro Lime Dressing:
½ cup mayonnaise
1 large bunch cilantro, chopped
1 garlic clove, minced
juice from 1 lime
½ avocado
salt and pepper to taste
Directions:
In a food processor, combine all the ingredients of the cilantro lime dressing and pulse until completely smooth.
For the salad, assemble the lettuce on the bottom of the bowl. Place black beans, corn, red cabbage, carrots, chicken and avocado in horizontal lines across the top. Pour cilantro dressing on top.

PB&J No Bake Dessert Bites
2 cups favorite whole grains cereal
1 cup smooth peanut butter
½ cup strawberry preserves
Directions:
In a food processor, pulse all the ingredients together until well combined. Form into 1 inch round balls. Refrigerate for half an hour before serving.
