Slow Cooker Bolognese

An Italian classic, meaty bolognese sauce couldn’t be easier to make, with the help of a slow cooker. Rich, meaty sauce tossed with pasta and fresh basil and a sprinkling of grated parmesan, this is classic comfort food in a bowl. Slow Cooker Bolognese

3/4lb ground beef, 85% lean

2 slices bacon

28oz can crushed tomatoes

1tbsp tomato paste

2 carrots, peeled and chopped

1/2 onion, chopped

2 cloves garlic, chopped

1tsp oregano

1tsp dried thyme

salt and pepper to taste

generous splash of red wine

1/4 cup chopped parsley

1/4 cup chopped fresh basil

1/2lb pasta, like spaghetti

Directions:

Slightly crisp the bacon in a pan, then transfer to a cutting board and chop. Cook the beef in the pan with the bacon drippings and break up the meat. Transfer the meat and chopped bacon into a slow cooker, add the crushed tomatoes, tomato paste, carrots, onion, garlic and dried oregano and thyme. Cook on slow for 8 hours. Add the reg wine and cream, stir and cook on high for five minutes. Serve with pasta and top with fresh oregano and grated parmesan.
