Cilantro Rice

Ingredients

  • 1 cup Basmati rice
  • 1 cup fresh cilantro leaves, minced
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • salt to taste
  • 1/ cups water

Notes

  1. Saute garlic in olive oil until just fragrant. 
  2. Add rice and saute for one minute. 
  3. Add water, bring to a boil, then reduce heat to low and simmer covered for 15 minutes. 
  4. Turn off and allow rice to steam, covered, for 5 minutes. 
  5. Add chopped cilantro and fluff with a fork to combine. 
  6. Drizzle with a little more olive oil for super moist rice.
