New Twist on Classic Summer Dishes

Summer is the perfect time to relax, throw some food on the grill, and casually entertain. I stopped by Great Day Houston to share some tips for summer cooking and show how simple changes can really elevate your game.

Pistachio Basil Pesto and Crudite Platter


For the Pesto:

2 cups packed fresh basil

1/4 cup roasted, salted pistachios

1/2 cup extra virgin olive oil

1 clove garlic

juice of half a lemon

1/4 cup grated parmesan

salt to taste


Place all the ingredients in a food processor and blend until smooth. Serve with a variety of vegetables including purple cauliflower, Persian cucumbers, try colored carrots and Easter radishes for a vibrant take on a classic veggie tray.
