Mini Apricot and Goat Cheese Balls

Ingredients

  • 12 ounces chèvre, room temperature
  • 8 dried apricots, quartered
  • 1 cup chopped salted pistachios
  • 1 bag pretzel sticks

Instructions

  1. Cut the goat cheese to form into 1 inch balls.
  2. Place a quarter of the dried apricots in the center and roll into a ball.
  3. Roll in chopped pistachios and stick a pretzel through the top.
