Baked Overnight Banana Peanut Butter Oats

- 1/2 cup rolled oats
- 1 tbsp flax meal (you can substitute with a rolled oat mixture like this that already has it mixed together)
- 1/2 cup banana milk or milk of choice
- 1/4 cup low fat Greek yogurt (can substitute with plant-based yogurt)
- 2 bananas
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/4 cup maple syrup
- 1/4 cup raisins
- 1/4 cup semi-sweet chocolate chips
- 3 tbsp peanut butter
Instructions
- Spray a square baking dish with vegetable spray
- Mash the bananas in the bottom of the dish
- Add the Greek yogurt, cinnamon, vanilla, and banana milk and stir to combine.
- Add the rolled oats and flax meal and raisins and stir to combine
- Refrigerate at least 30 minutes or overnight
- Place the three tablespoons of peanut butter in equal dollops across the top of the oats and swirl to spread out
- Top with the chocolate chips and bake at 350 for 20 minutes
