Baked Overnight Banana Peanut Butter Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp flax meal (you can substitute with a rolled oat mixture like this that already has it mixed together)
  • 1/2 cup banana milk or milk of choice
  • 1/4 cup low fat Greek yogurt (can substitute with plant-based yogurt)
  • 2 bananas
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 cup maple syrup
  • 1/4 cup raisins
  • 1/4 cup semi-sweet chocolate chips
  • 3 tbsp peanut butter

Instructions

  1. Spray a square baking dish with vegetable spray
  2. Mash the bananas in the bottom of the dish
  3. Add the Greek yogurt, cinnamon, vanilla, and banana milk and stir to combine.
  4. Add the rolled oats and flax meal and raisins and stir to combine
  5. Refrigerate at least 30 minutes or overnight
  6. Place the three tablespoons of peanut butter in equal dollops across the top of the oats and swirl to spread out
  7. Top with the chocolate chips and bake at 350 for 20 minutes
