Penne with Kale and Sausage

Ingredients

Scale
  • 56 sausages, sliced vertically into bite size pieces
  • 1 bunch Dino kale, washed, stemmed and chopped (or 1, 5oz box of washed and stemmed baby kale)
  • 1, 8 oz box penne pasta (I use De Boles Multi grain penne for this recipe because it has rice, quinoa and amaranth, which is healthy and full of protein and fiber for growing bodies)
  • 3 cloves of garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 4 tbsp grated parmesan
  • splash of cream (optional)

Instructions

  1. Place water to boil for pasta.
  2. Before it comes to a boil, add a generous pinch of salt.  
  3. Add pasta.  
  4. Meanwhile, in a large frying pan set to medium heat, ad the olive oil.  Add the sliced sausages and fry until they begin to brown, then flip them.  
  5. Once they are browned on all sides, add the garlic clove and sauce for just a few seconds before adding the kale.  
  6. Add lemon juice and one ladle full of the pasta cooking water.  Stir and wilt the kale.  
  7. At this point the pasta should be ready, so drain the water and add the pasta to the frying pan.  
  8. Add the splash of cream, if you’re using it, and sprinkle with half of the grated parmesan. Turn off heat, transfer the pasta to a large bowl and sprinkle with remaining parmesan.
  9. Enjoy!
