Switch Up Your Lunchbox Routine!

Sushi Sandwich

  • 2 slices of squishy whole wheat bread, crust removed
  • 1 tbsp extra virgin, cold press olive oil (I use Pompeian)
  • 1 carrot, julienne
  • 1 cucumber, julienne
  • 1 slice American cheese (Cheddar is delicious too!)
  • 1 slice smoked turkey breast (Ham is yummy also!)

Instructions

  1. Using a rolling pin, roll out the bread until it is thin, like sushi rice on a sushi roll (about 1/8 thick).
  2. Brush generously with olive oil.  This serves two purposes; it keeps your bread moist and it offers a  healthy kick to this sandwich because it’s high in unsaturated fat!
  3. Place the slice of cheese, then the slice of turkey, on the oiled bread.  
  4. Place a couple sprigs of julienne carrot and cucumber.  
  5. Roll up your ‘sushi sandwich’, then give it a little squeeze to firm up.  
  6. Slice in half, then in half again.  
  7. Place in a bento box or divided tupperware to maintain sushi shape.  
  8. Dig in and enjoy!
