Baked Oats

Ingredients

  • 2 cups organic rolled oats
  • 1 cup unsweetened apple sauce
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup plant based milk
  • 1/4 cup maple syrup (plus more for serving)
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup blackberries (can sub blueberries, fresh or frozen)
  • 1 cup sliced strawberries

Instructions

  1. Heat oven to 375
  2. Spray a square glass baking dish with vegetable spray
  3. Add the oats, baking powder and cinnamon and stir to combine
  4. Add the applesauce, milk, vanilla, maple syrup and egg and whisk to combine
  5. Stir in the blackberries and spread in a thin layer
  6. Top with sliced strawberries and bake for 20 minutes
  7. Serve with maple syrup
