Roni’s Summer Coleslaw

Ingredients

  • 1/4 cup extra virgin olive oil
  • 3/4 cup red wine vinegar
  • 4 garlic cloves, crushed
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups shredded red cabbage
  • 3 cups shredded green cabbage
  • 1 cup sliced carrots
  • 1 cup sliced red bell pepper

Instructions

  1. Mix the olive oil, red wine vinegar, sugar, salt and pepper.  
  2. Add the crushed whole garlic cloves (it tastes best when you can refrigerate and let the garlic marinate overnight). This will make quite a bit of vinaigrette so store leftovers for future salads.
  3. Meanwhile, mix together the vegetables.
  4. Whisk the vinaigrette to combine the olive oil and vinegar, then pour over the slaw to desired taste.
