Wash the potatoes and scrub well, but do not peel.
Skewer the potatoes ¾ way down the potato, horizontally.
Using a sharp knife, cut thin 1/8 slits, slicing until you hit the wooden skewer. This will prevent slicing the potatoes all the way in half.
Remove the skewer and brush with olive oil all over the potato and sprinkle generously with salt.
Place in air fryer basket and cook on high for 15 minutes.
Sprinkle evenly with Parmesan and cook for another 1-2 minutes or until cheese melts.
