Diet Friendly Football Food

Watching a football game with friends wouldn’t be complete without something to nibble on.  But before you break out the cream cheese filled, bacon wrapped jalapeños (that sounds awesome too!) try some of these equally decadent but more healthful foods.  I am not a huge beer lover, so I lean towards a glass of wine or skinny cocktail for entertaining. If you’re watching calories, consider a light colored spirit like vodka or gin, which usually is lower in calories than a rum drink.  Here is one of my new favorites, a 120 calorie Pomegranate Acai Martini.

Roasted Pork Tenderloin with potato pancakes Appetizer
1 pre marinated garlic and herb pork tenderloin (silver skin removed)
2 lb Russet potatoes, peeled and cubed
Olive oil
Salt and pepper to taste
1.5 cups plain yogurt
1 garlic clove
1 tbsp chives
Squeeze of lemon juice
Salt and pepper to taste
Directions:
Place potatoes in the bottom of a large baking dish. Toss with light coating of olive oil and sprinkling of salt and pepper. Place the tenderloin on top of the potatoes and roast at 375 for about 30 minutes or until cooked through. Place the tenderloin on a cutting board and allow to rest. Meanwhile, place the potatoes in a food processor and pulse until coarse mixture forms. Heat a cast iron skillet to medium heat and form the potatoes into pancakes, about half and inch thick and the size of a small Palm. Fry in olive oil on each side until brown. In a small mixing bowl, mix the yogurt, garlic, chives, lemon juice, salt and pepper. When the potatoes are fried and drained on a paper towel, place on s large platter. Top with the yogurt and slices of pork tenderloin.

Apple Cranberry Crumble
4 large apples, peeled, cored and sliced
1 cup frozen cranberries
1/2 cup plus 2 Tbsp. brown sugar
1 tsp. ground cinnamon
1/2 cup flour
3 Tbsp. cold butter
1 cup whole wheat cereal with pecans, raisins and dates
1 container apple cranberry flavored yogurt
 
Directions:
Preheat oven to 375°F. Toss apples with cranberries, brown sugar, cubed butter and cinnamon in 8-inch square baking dish. Sprinkle cereal over apple mixture. Bake 30 minutes or until apples are tender and mixture is hot and bubbly. Serve warm. Garnish with Apple cranberry yogurt.
