Plant Based Protein – Get Lean without the Beef

I wanted to share some interesting stats:

  • 1 pound of pea protein is 10 times more efficient from a greenhouse gas perspective than grass-fed beef.
  • Beef contains 7 grams of protein per ounce for about 75 calories, there are many plant based foods that have more protein per ounce than meat

I’m not sure when we became obsessed with meat, but I think it’s about time we consider other resources for getting much needed protein in our bodies, while using less resources. Spirulina, spinach, broccoli, peas, hemp seeds and nuts are all higher in protein, per serving, than beef.  Food products are getting on the bandwagon as well and they are getting tastier than ever. I’m not saying we should all go vegan, but sipping out beef for plant based ‘meats’ once a week is any easy start to making our bodies, and our plant healthier. Here are a couple recipes I am loving right now.

Beyond Meat Tacos
1 package Beyond Meat crumbles (or any other plant based meat crumbles)
1 tbsp taco seasoning
1 tbsp ground cumin
sprinkle of salt and pepper
1 tbsp vegetable oil
1/2 onion diced
1/4 cup water
sliced avocado, salsa, green onion and sour cream for garnish
8 corn tortillas
Directions:
In a skillet, add the oil and onions and sauce until they begin to soften. Add the meat crumbles, seasoning and water, stir and cover. Cook for 5 minutes or warmed through. Serve on corn tortillas and garnish with avocado, salsa, green onion and sour cream.

Chocolate Banana Chia Pudding
1 scoop plant based protein powder
1 1/2 cups unsweetened coconut milk
1 ripe banana
1 tbsp chia seeds
Directions:
In a blender, combine the protein powder, coconut milk and banana. Blend until smooth. Add the chia seeds and pulse until combined.  Pour into 4 ramekins and chill for a couple hours.
