Super Bowl Entertaining to Feed a Hungry Crowd

Nothing says Super Bowl like biting into something meaty, tangy, crunchy, salty, sweet and spicy! Ive got you covered with some of my favorite game day appetizers.  And if your guests don’t go crazy over these Pineapple sweet and sour pork meatballs or this Seven Layer Hummus Dip, send em packing (or make them do the dishes!)
[ingredients]
SWEET AND SOUR PORK MEATBALLS
 Ingredients:
1 ½ lbs  ground lean pork
½ onion (yellow or green) diced
splash of cream
1 egg, beaten
salt and pepper to taste
19.5 jar sriracha garlic BBQ sauce
20 oz pineapple juice
fresh pineapple for garnish (optional)
Directions:
Combine the  Sriracha BBQ sauce and pineapple juice in a sauce pan and set to high. Meanwhile, heat your oven to 375.  Combine the ground pork, egg, cream, onion, and salt and pepper and mix.  Roll into bite sized meatballs on a parchment lined baking sheet.  Bake for 30 minutes or until golden brown.  Transfer the meatballs to the sauce pan and continue to cook for about 5 minutes or sauce is thick.  Serve with fresh pineapple on a skewer.

SEVEN LAYER HUMMUS DIP
1 10-oz container classic hummus
1 10-oz container roasted red pepper hummus
1 10-oz container spinach and artichoke hummus
Fresh toppings of your choice, here are some suggestions:
1 cup chopped Persian cucumber
1 cup feta, cubed
1 cup cherry tomatoes, halved
1 cup sundries tomatoes, sliced
1 cup red or yellow bell pepper
1 cup diced red onion
1 cup chopped fresh herbs such as basil, parsley or dill
Directions:
In a medium sized glass compost bowl, fill the bottom with an even layer of classic hummus.  Next, sprinkle a layer of fresh vegetables. Continue with a layer of roasted red pepper hummus, followed by another layer of vegetables. Scoop and spread the spinach and artichoke hummus followed by the other layers of vegetables and cheese. Top with fresh herbs or sun dried tomatoes.
