
Nutella Stuffed Banana Bread Muffins
We have some extra time on our hands to cook and bake as a family. This ‘stay at home order’ or ‘self isolation’ has been so good for us to just slow down and enjoy all this time together. One thing I’ve been making a lot of are these Nutella Stuffed Banana Bread Muffins. My kids love to open them up and find the melty chocolate center, it’s a decadent treat for lazy mornings. Nutella Stuffed Banana Bread Muffins
½cup/113 grams unsalted butter (1 stick), plus more for greasing the pan
2cups/256 grams all-purpose flour
1teaspoon baking soda
¾teaspoon kosher salt
1 ½cups/310 grams mashed bananas, from about 3 medium bananas
⅔cup/134 grams granulated sugar
¼cup/57 sour cream – you can substitute yogurt
2eggs
1teaspoon vanilla extract
⅓cup/99 Nutella
Directions:
Heat oven to 350 degrees. Butter muffin tins. Stir the flour, baking soda and salt together in a bowl.Melt butter in a light-colored saucepan over medium heat until melted. Let the butter brown slightly to add a nutty flavor, but watch the pan so the butter doesn’t burn. Add it to the mashed bananas, sugar, yogurt, eggs and vanilla extract. Stir until well combined, then add the flour mixture and stir until just combined. Pour half the batter into the muffin tins, then scoop out a teaspoon of Nutella. Top with the remaining batter. Bake at 350 for 12-15 minutes or until golden brown.
